Here's what you need:
1 whole wheat pita
1 Tbs pesto, I used basil pesto but sun dried tomato would be good as well
1 Tbs onion (or more if you like)
1 Tbs fresh basil
1 Tbs fresh cilantro
1-2 mushrooms sliced
1/2 Roma Tomato chopped
Handful of baby spinach leaves chopped
1 oz Feta cheese, I used the reduced fat
1 Tbs grated parmesan cheese
1 Tbs Olive oil
Salt and pepper to taste
- Preheat the oven to 350.
- You can either place the pita on a baking sheet or directly on the rack. I made mine on a sheet but I think that next time I will put it on the rack so that it will be crispier.
- Spread the pesto onto the pita.
- Top with onion, tomato, basil, cilantro, mushrooms and spinach.
- Sprinkle the feta cheese on top then add the parmesan cheese.
- Drizle the olive oil over it.
- Sprinkle with salt and pepper.
- Bake in the oven for 12-15 minutes or until it is done to your liking.
